Sounds like a fun project. As far as restoring your tank and side covers to stock, the stickers might be the tough part. With these bikes hitting 30 years of age, I doubt you'd find the decals anywhere. Closest thing might be some stock units on EBay or the used bike dealer of your choice. Some of the older CB750s have metal or plastic HONDA emblems on the tank, instead of decals. Also, the 1979 anniversary models have a little emblem on the side, but the rest of that year have the decals also.
I guess if you were going to strip the existing paint off, you could use an airbrush to give it the decal look. That might be something for a paint shop to do, but it would be a nice touch.
Planning on keeping the fairing? I'm debating putting one on my bike. My sons would think I'm a sissy, but my long torso and 65mph does beat me up a bit.
