I am not sure about production numbers for 1974, but it was a LOT. The CB750 was one of the best selling motorcycles ever. Parts? What parts are you in need of? Since Honda made the CB750 SOHC from 69-78 with only minor changes, it is not hard to find parts for them. There is a thread here that lists several parts suppliers for these bikes. Ebay is full of parts. As for parting a bike out, I laugh everytime I hear this. It is a total PITA. You might be able to sell the gas tank and side covers, if they are in good shape. Then you end up with the rest of the bike just sitting, taking up space.
If the engine turns over, it should run. Post some pictures, so we can see what you have.
