Replacing gaskets while motor still on bike?

I have some gaskets leaking oil and they are leaking more and not safe to ride it anymore as oil is getting on rear tire! Can I tear down the top end ( valves, head, cylinders) to replace all those gaskrets while motor is still on bike? I have a manual and I have lots of experience with dirt bikes and quads so tearing it apart will not be a problem, but I am hoping I don't have to take the time & trouble of removing the motor to do this. Anyone done this before? Any info is greatly appreciated.

More detail is needed: which year, which gaskets are leaking, etc.  I believe the FSM for either SOHC or DOHC is available, and will say whether the gasket you wish can be removed while the engine is in the frame.

It's a 1980 cb750f dohc, the top end gaskets all need replaced. I looked through the manual I have but it didn't say anything, just shows with the motor removed but I didn't know if that was just for easy pic taking for the manual or not, there looks to be enough room with the gas tank off but I thought I'd ask first.

Well I am just bringing this back up. On my 78K, I have to remove the motor. I thought for the dohc bikes, they changed that. Almost positive you can remove the head while in frame.
The ride IS the adventure. The destination is just to get gas!

According to page 6-1 of the DOHC FSM, in order to remove the cylinder head (assuming you are replacing that gasket), you do need to remove the engine.  Page 3-7 says that you can replace the valve cover gasket with the engine in place (as valve adjustment should be able to be done with the engine in place).  Sorry to be the bearer of bad news.
