inconsistent Idle

I have a 81 Honda cb 750 custom.  I have a some changes to the engine. 1. I got rid of the air box, 2. I added individual Carbs air filters, 3. I also have a 4 into 1 drag pipe on it.  At one point it ran really nice like this.  I was really proud of it. It sat for a while, but it still runs.  I made a mistake, I added a baffel and changed the jets, to make it quieter.  Bad move, it ran like crap.  I put the old jets back in took out the baffles and now it runs ok.  My problems is this: I start it with the choke on, push the choke off and it just barley runs.  I ride it and the idle goes through the roof.  I turn down the idle screw and it almost goes off, I ride it and it screams again, then on its own comes back down to a low idle then almost cuts off.  I have to hold the throttle open to keep it running.

It sounds like you have air leaks around the manifold rubbers. Get it running and spray some wd-40 around the manifolds and listen for idle changes. Your issue sounds like classic air leaks making the mix really lean and having idle issues.
