I see that you bought a "Universal" cafe seat. So you do understand that it is not going to be a bolt on piece. I also looked at the installation guide. If you notice they are installing it on a totally different bike then you have. I think it is a Honda 350 they are working on. You will notice that the frame on that bike is straight horizontally, where yours dips down, and then curves up. This is why the DOHC CB 750's are not very popular for cafe conversions. Usually when some one cafe's a DOHC, they make their own seat from fiberglass, or aluminum. You would probably be better off making your own pan with fiberglass then trying to mount the universal seat, and trying to make it look right. If you use the search feature on the forum here, you will find threads that show how to make a seat. I did a modification of one in my "Just what the world needs" thread. However to answer your question, yes you will need to remove that bracket.
