intro + lots of questions!!

Hi, My name is Chi and I'm a 44 year new rider.  Taking the MSF course next month.

I have an 80 year old friend who has an 82 cb750 with a windjammer fairing.  He has offered to give me his motorcycle with 3,900 miles which he had stored in his garage for many many years.  2 years ago, he took the bike to a mechanic to get on the road and got it registered but hasn't driven it since registering it.

The bike has been stored indoors all these years and I suspect you can consider this a barn find.  I'm not sure how much work this bike will need since I'll have to get it towed to my house.  The owner thinks I just need to charge the battery and it should be fine.  He did mention that the throttle was a bit sticky the last time he rode it so I know it's needs some work.  New tires would be a great start.

Here's my questions:
is this a good first bike?
would I be making a mistake to convert the bike to a cafe style racer?
any parts manuals available online?

This is only my opinion mind you but if you're just learning to ride at 44 then a cafe racer is probably the last thing you need until you have some riding time under your belt unless you are just going for looks but 750's do make great cafe racers.
As a first bike..If I were to chose a first bike it would probably be a bit smaller but since you already have it, it should be okay. Just remember that big bikes are a bit top heavy at very slow speeds.

Sorry, I accidentally replied to you via email.  redoing the reply here:

I agree that I haven't the skills to actually drive a cafe racer, but the look appeals to me somehow.  

I am interested in updating the looks of the old 750, but not sure if it would be sacriligious or something, but I guess this is a subjective opinion.  I suspect these 750s won't be worth much in the way of classic bikes in the years to come, but I just wanted to make sure I wasn't doing a dis-service by modifying this clean example.  I'm sure there's someone out there who would pay top dollar for a clean example, I just don't want to be modifying a bike in which only 3 were made (doubtful in this case, but just checking).
