I was looking at that buchanan website last night and I roughly calculated the price of running the 21's and it was around $700!

Now I think I have a new plan, find the front wheel of a 77 or 78 750K and running the stock 19. Then find the rear rim hub of a 76 750F (which is compatible with a disc brake) and lacing that up to a used 19 rim. Then just going with big big tires. Just hoping that it'll cost a little less then running 21s.
