These engines were meant to be revved (at least that's what I was told about the dohc models). Granted, one should not be tearing around at the red line all day, but running halfway between idle and red line is probably best. I'm sure the engineers tested many combinations of sprockets before deciding on the best compromise between economy and performance.
The bottom line? Find the ratio that suits your riding style. Remember with big changes to sprockets, you may need to remove or add links to the chain. Sounds like you're on top of that already. :-)
