Very nice looking bike. I'd keep the stock pipes. They look to be in good condition. The after market ones don't seem to hold up as well. Good idea to stay away from pods too. They can be a real bear to jet correctly with CV carbs (as you've already read). If you want to go fast, get another Ducati.

I've got one of those LED voltage meters to. Great investment, I love not having to guess if my charging system is still working.
Not sure how low of a handle bar you're looking at. They might be a bit uncomfortable with the low cruiser style seat. I didn't care for the stock ape hangers on my 750K either. I got a new bar with a 'superbike' bend. It's got about a two inch rise and three inch pullback.
Anyway, I think you got a great deal for $500 despite the charging system overhaul and carb cleanings that were required. I think 90% of the 79 to 82 DOCHs are parked and eventually sold for those same problems. At least you've got it sorted out now.
