Shiney is right, at least from my experience here in Canada.

It's reasonably common during backyard deals for people to hand you a handwritten bill of sale with no price on it.  That way it's up to the buyer how they want to handle it.

Two things to consider though.  What taxes you want to pay, and how much you want to insure it for (sometimes they won't insure it for more than you paid).

I of course am always an upstanding citizen and write down the full amount, paying full taxes
