Heavy leather boots with ankle coverage are best. Motorcycle boots have the advantage of flaps that cover the laces, so they won't come undone from the wind and end up in your chain. Wear them for at least 3-4 weeks on and off the bike before a long trip to break them in, otherwise they'll be so stiff they won't be comfortable hovering over the controls.
