Valve Job & Bearing question

Hey guys, I've just finished pulling all the valves and removing the old hardened valve seals. I'm going to lap the valves with some permatex compound before putting the new seals on and buttoning the motor up. I just wanted to ask if I should lube up the valves when putting them back in? I bought some white lithium (water & heat proof) grease but I'm not sure if that is the right stuff....I also have some bel-ray water proof grease I used on the axel of my Harley.... not sure if I should use that..... what is the best type to use for this? Also I'm pulling the fork legs to put on the fork gators and I wasn't sure if they are attached to the headlight brackets or not or if I can just loosen the clamp bolts on the triple trees and they should slide out? I apologize I know that's a lot.
Also the bike is a 1978 CB750K with 17K miles, should I be replacing the wheel bearings and steering head bearing? I have a manual but i'm not sure the best type to get? Any advice would be awesome. Thanks guys.
