I've got my Superbowl dip.  Also labor intensive, but delicious.
2 cans black beans
1 onion
1/2 lbs bacon
1/2 cup shredded cheese, sharp cheddar
half cup diced green chiles
crushed red pepper
your favorite salsa
sour cream
Dice the bacon and begin frying it. A good size electric skillet works great.  While it's frying, pour the juice off the beans and save it.  I use a large bowl and wooden spoon to break the skins and partially mash the beans. As the bacon begins to get done,  add the green chiles and diced onion and beans, and mix it up well.  Also while doing this, I use a spatula to further mash the beans.  You don't want soup, but they should be mashed.  keep the heat on, and add the bean juice, crushed red peppers(not to much), and about a cup of salsa, and keep mixing so the beans don't burn.   When well mixed, turn the heat down to simmer to reduce the juices down.  Stir occasionally.  Should thicken up in about a half hour, but stir occasionally.  When the consistency seems about like oatmeal, pour to large bowl, hollow out center and fill with a cup of sour cream, and mix it again.sprinkle with shredded cheese.  Let it cool long enough to be just warm, and grab the tortilla chips.  You can tweak the peppers, salsa for how hot you want it.  Makes a bunch, and just microwave it if it doesn't get used up.  Goes well with all beers and most football.
