Continuing the Winter Project

Okay, the seat should be here today and I'm finished with the "Winter Project" code-named Solstice. The plan is to get a few miles on the bike, get the carbs cleaned/rejetted for the new pipe but I have yet to really evaluate the suspension. I need to get that sorted out before moving to the next phase on the bike.
I've done some reading about
836 kits, 826 pistons,
mild cams,
port/polish the heads, etc.. But I do not have the tools or experience in building the 750; were it a 302, 289, or 351, it wouldn't be a problem. I believe there may be a source in Austin that may do engine performance builds but, quite frankly, what good is power if you can't keep it on the ground?
Recommendations for piston/cc displacement, cams, valve train, and head service would be appreciated.
