Need General Advice 1981 CB750F SS

I feel like posting a question like this on a classic Honda forum may be taboo but figured this would be the place to go. Last year I acquired a one owner 1981 CB 750F SS with 6400 miles that was parked late 80's in a temperature controlled garage. Went through the bike and got the carbs adjusted and it runs like a top. It got me into motorcycles and I have since put 2000 miles on it. But I have moved onto medical school and found out when it is not ran for a week or so the first few miles it studders and runs poorly at higher RPMs until it seems like it clears whatever is the cause.
I have been leaning towards selling it, and getting something fuel injected and more reliable for my commute (also right now I have a garage, but next year it would have to be parked outdoors). I also feel bad about putting miles on a low mileage bike that someone else would/may be proud to have.
I guess my real questions boils down to:
1: Is this bike special enough to even worry about putting A LOT of miles on it over the next few years, and it having to be parked outdoors starting next year
2: How much is a low mileage, 2 owner CB750F SS worth?
