What year frames will hold the 1975 Honda CB750 engine?
And what (if any) modifications will need to be done?

Which smaller engine models can the CB750 engine be dropped into?

A 1975 Honda CB500, maybe?

Welcome to the forum. You can put that engine into anything, you want, but the only bolt in frames will be the 69-78 K model, 75-78 F model. Anything else will require a cutting torch, and a welder.
