I used to have a small little chart on this that showed the workings of the how and when everything interacted.

With the sohc carbs, the idle mix screw affected about 3/4 of the throttle range. Now think about that for a second. 3/4 is a lot, in fact, that is the range you will spend probably 80% of your time in. this also explains why so many people have issues that clear up when the idle circuit is cleaned properly and there are very few main jet issues. The main jet is really like a secondary in a way.

I would assume the dohc carbs are fairly similar to this.

Something that needs to be taken into consideration is that on some carbs, it is an "air" adjustment, and on others it is a "fuel" adjustment. However I have seen carbs with both. I think it was a Suzuki that had both.

Air of fuel screws, seems the effect was the same. The idle circuit still affected a large portion of the throttle range. That would really suck to tune carbs with both adjustments.
