No shims on the SOHC cams. All the adjustment is made at the rockers. All that is needed to get the cam out after you pull the valve cover is an 8mm and 10mm socket. No special tools required...anywhere

The Honda CB750s and all Hondas use KEIHIN carbs.
It is stamped on the side of the carbs.

All Japanese motorcycles use either Mikunis or Keihin carbs.

I would not encourage this OP to take the engine apart.

Adjust the valves before you do compression tests. Valves are the first thing to do before timing, carb adjustments etc. You'll just have to do all the other stuff over after you adjust the valves.
