backfire then excessive power boost

Alright, i finally rode the bike home yesterday, thanks to you guys.
So i figured this was a good place to turn when this started happening.

After a few adjustments and being warmed up, i got my power back and can reach higher speeds, so i can ride. When i was taking it home yesterday, i was riding along in i think 3rd gear when i had a little back fire, but then all of a sudden my RPM's spiked and it wanted to take the hell off. It stayed like this so i just went ahead to 4th and rode the rest of the way home. Got it back down to 1st and the same thing happened, it wanted to jump to second so damn bad, even though i was trying my best to bring the RPM's down.
Weird thing is, when it does this, it almost seems like that is the power i should expect constantly from a 750.

Any ideas why this might be happening?

It sounds like it is running on 3 cylinders most of the time. Then when the 4th chimes in away you go. I would suspect a plug or cap or shorting HT lead. Failing that, one carb may be misfueling.

Next time you start it up, feel the header pipes and see which one (if any) doesnt get hot. Caution is advised naturally.

I'll have to check quickly, since they heat up pretty fast, even if one is failing most of the time. I suspect it is my fourth, if any, i had problems with it flooding out in the beginning and it has a rigged spark plug cable. Thanks for the advice, i'll let you know what i find.

A backyard way to check the pipes is to put spit on your finger and touch the pipe VERY fast, a quick swipe more or less. If it sizzles, it is hot. If it burns yet, it might be too hot!

I use this as a simple test only.
A laser temp gun that reads high would work too.
The ride IS the adventure. The destination is just to get gas!
