Myself ,I never done before but after checking on it http://cgi.ebay.com/ebaymotors/NOS-HONDA-GAS-TANK-CB450-CL450-CB500-CB550-CB750-AHRMA-/380131945540?pt=Motorcycles_Parts_Accessories&hash=item5881a12c44, these are the rubbers that hold it on in the front ,according to this sale ad on "E" fits :CB450-CL450-CB500-CB550-CB750,so that will fit in,your 78 is it a K or a F cause the F has one big az mail-box (i have the 77) and K would be smaller but haven't got to no how much.
I'm sure some-one has done it and of course can be done ,BUT mod  my concern would be the pet-cock,looking at this pic

very good choice seems I've seen them in pics on bikes,Lets hope can be excepts

I take it you don't have a tank
OR do you have the 500 ?already
Lets say the pet-cock gets in the way(hits something) ; then you would elbow out(away from bike)
and have to use an in linefilter and valve shut off ,you'll find and here others say you can't use a inline filter ,say it blocks flow, believe what you wont .But never never run with out a filter,I'll have 2 on mine (stock in pet cock ) witch you never change or clean till it's to late and it's raining and my (fine-er)glass in line you see and are consions of it each day.
Ever wonder am I getting gas you can see it

I do not have the tank, but was fishing around thinking of using it on my 750F.  So the only big issue would be the petcock, is that right?

I'm not for sure ,never did it to my 750,you can run with a Camel back on full of gas,and the bike will run, most situations fuel valve is the prob.
leave the post up and after it's to late some-one will see it and tell you
I was on one sight were they didn't show there bikes cause afraid some-one was going to use there idea,Biking is a brother-hood to those that have respect and we help for the love of sport, not greed or self
lets have fun and get this bike started

Also quick question, to remove the gas tank off of my 750, just undo the gasline and then pull up?

1st1st shut off gas and pull off hose at tank.
lift your seat you can see under your tank theres a rubber pad work that loose ,mine has 2 lil taps on frame is all ,then push it forward so rubber is completely loose /off ,then pull tank back it will then be loose .

It should. Might not line up perfect with the seat though.

Just wondering if you ever attempted to fit a cb500t tank to your 750. I'm doing one right now and have discovered that it's a fairly daunting project. It can be done but just barely.

It depends on the model. I posted photo of my attempt to put a CB500T tank on a '79 CB750K. The problem on the '79 was the two backbones. The CB500T only has one, so it entailed beating the crap out of the inside of it. (Annoying my jackass neighbor - added bonus!)
The front mounts line up perfectly on the CB750 pivots. Things were going well when someone drove by and offered almost three times what I had in the bike, and wanted the original tank, so  I never got to finish it.

Just found the old thread:
