Where to start...

I have been trying to learn as much as I can about what bike to use for building a "cafe racer" style bike.  I want to use a Honda.  I am looking for some guidance as to what cb750 (or even a cb900) years/models would be the best to start with (mainly the engine/frame).  I have researched a bit and got a general understanding of the various models/engine configurations (SOHC, DOHC) but not much further than that.  I have learned nothing about frame differences, etc.  Any input, good informational website references, personal experience would be great.

Welcome to the forum. The best, and easiest model to build a cafe racer out of is the 69-76 SOHC bikes! You might want to check out dimecitycycles.com .

I've only did this once(http thing) ,But a little history goes along ways for me,Good question,,?grab a drink this is long  but a great read ..69-76 as Tools was saying have the look or inproved the look just pretty with all that chrome(have it)77 N 78 the last of sohc,(black rules) are not as easy to get parts there sought after dual disc and some other things I'm learning are off them already,but there out there,as I said Good question.and welcome.<nabble_embed></nabble_embed>http://legacyweb.triumf.ca/people/baartman/bike/cb750-77.htmlBlack Rules
